Saucy Oriental Dinner

This is a favorite of my family's! We LOVE any kind of ethnic food...Chinese being one of our favorites. Hope you enjoy this one as much as we have!

6 ounces Rice vermicelli, broken up and cooked.

Oriental Sauce:
1 cup water
3 tbsp. soy sauce
2 tbsp. honey
1 tbsp. hoisin sauce
1/2 tsp. sambal oelek (chili paste)
2 garlic cloves minced
4 tsp. cornstarch

pork tenderloin or chicken breast, cut into 1/2 inch cubes
bag of chopped fresh oriental mixed vegetables
1/4 cup sliced green onion

Heat cooking oil in wok or large frying pan on med/high until hot. Add pork or chicken. Stir-fry for 3 minutes. Add veggies, until veggies are tender-crisp. Stir in sace. Heat for about 4 minutes until boiling and slightly thickened. Add cooked vermicelli. This is good over brown or white rice, too.

A Time Saving Suggestion

Something that has worked for my family both economically and nutritionally is for me to make out a two week meal plan twice a month. I then make my grocery list according to our meal plan. Its great cause I do my major grocery shopping only twice a month! We'll pick up the odd thing here and there, and our produce, milk, etc throughout the month. But I try to pick a few meals that incorporate the same ingredients, so it makes it even more easy to grocery shop. This way of cooking has saved us major bucks, and its so nice to look on my fridge in the morning and see what I'm making that night. Then I can take out my chicken or beef to thaw that morning, and I'm ready to cook that evening! It has made my life SO much easier, and its fun to look through cook books and online cooking websites to come up with fresh and new ideas for supper time! My mom and sister have been doing this for years, and finally I gave in this winter...never will I go back to the "supper guessing game". :) I hope this encourages you all a little, as well as give you a new idea to change up your dinner/grocery shopping routine.
